Why do a lot of tomato jam recipes have large (1 or 2 cups in some cases) amounts of lemon juice in them?


Answers:

Lemon Juice is an acid and high in Vit C. This helps preserve foods and prevent oxidizing (dis-colouring). Also it adds a nice sharpness to cut the sweetness of the jam.

**Some chefs actually use Vit C tablets in green soups and purees to help keep the colour and lemon juice is used to stop fruit salads turnig brown.
