Do you have a recipe for such a pie? I lost mine and I was having some trouble finding it online.

Pineapple - Coconut Cream Dream Pie

This pie is a "cooked" filling like your granny used to make. It's fully of fat, sugar, calories

Change to: servings US Metric
Crust
20 crisp oatmeal cookies (You can find sugar-free ones or make your own.)
1/4 cup reduced fat margarine, melted
Filling
3/4 cup Splenda sugar substitute
1/3 cup cornstarch
1 (20 ounce) can crushed pineapple in juice, drained (reserve juice)
1 (14 ounce) can coconut milk (not cream!)
5 large egg yolks
2 tablespoons reduced fat margarine, cut small
1 cup unsweetened flaked coconut, chopped finer
Topping
1 cup light whipped topping or whipping cream, whipped
2 tablespoons Splenda sugar substitute

Heat oven to 350 degrees. Generously coat a 9 inch pie plate with spray.
Process the cookies in a food processor until fine crumbs. Add margarine and process until crumbs are moist. Press into the pie plate. Bake 12 minutes until toasted around the edges and cool on a wire rack.
Mix Splenda and cornstarch in a 2-qt. saucepan. Add enough pineapple juice to the coconut milk to make 2 1/2 cups. Stir into the sugar mixture, then bring to a boil over medium heat, stirring occasionally, but not briskly. Boil one minute. Remove from heat.
Whisk yolks to mix; gradually whisk in about half the hot mixture; return to saucepan. Stir over low heat for 2 minutes. Remove from heat, stir in margarine till melted. Stir in pineapple and coconut. Pour into crust. Cover surface with plastic wrap to prevent a skin from forming and refrigerate 3 hours.
Before serving: beat the cream and sugar to stiff peaks if using cream. Spread over pie and garnish with pineapple chunks, shredded coconut, or mint sprigs.


Pineapple Coconut Pie

1 1/2 cups sugar
4 eggs
1/2 cup butter, melted
1 (8 1/4 ounce) can crushed pineapple
1 cup flaked coconut
1 tablespoon vanilla
2 (9 inch) unbaked pie shells

Make sure butter has cooled a little.
Mix sugar, eggs and butter.
Mix in pineapple, coconut and vanilla.
Pour into pie shells.
Bake at 350 degrees F for 35 minutes or until done.


Crushed Pineapple Sour Cream Pie Recipe

1 (9 inch) pie crust, baked
1 (8 ounce) can crushed pineapple with juice
1 (3.5 ounce) package instant vanilla pudding mix
2 tablespoons white sugar
1 cup sour cream

In a large mixing bowl, combine pineapple, dry pudding mix, and sugar. Stir well, then add sour cream. Beat on low speed for 2 minutes. Pour mixture into prepared pie shell. Chill before serving. Garnish as desired.


PINEAPPLE-COCONUT PIE
1/4 c. sugar + 2 tsp. Sweet 'n Low*
1/2 stick margarine
2 slightly beaten eggs
1 tbsp. flour
1 (8 oz.) can crushed pineapple
1 c. Angel Flake coconut

Melt margarine. Mix flour with sugar; add beaten eggs, pineapple, coconut and melted margarine. Pour in a shallow 9" pie crust. Bake 45 minutes at 350 degrees. *Standard measuring spoon.


No Bake Pineapple Cream Pie

1/2 cup butter or margarine
3/4 cup flour
1/2 cup flaked coconut
2 tablespoons brown sugar

8 ounces cream cheese, room temperature
1/3 cup frozen orange juice concentrate, thawed
1 can (14) ounces sweetened condensed milk
1 cup crushed pineapple, about half of a 20-ounce can
lightly sweetened whipped cream or whipped topping

In medium saucepan melt butter over low heat. Stir in flour, coconut and brown sugar. Cook, stirring constantly, until deep golden brown. With a spoon, press hot mixture into a 9-inch pie pan. Set aside to cool while preparing filling.
In large mixing bowl, combine cream cheese, orange juice concentrate, and sweetened condensed milk; beat until smooth and well blended. Stir in well-drained pineapple; spoon into crust layer. Chill pineapple pie thoroughly. Serve this pineapple pie with whipped cream or whipped topping.
