Question:

Cake: I have a wonderful recipe for chocolate sheet cake.?

Is there any reason why I couldn't bake it in a 8" or 9" cake pan? Would I have to change anything other than baking time?

Answers:

Instead of one sheet cake in a 9 x 13, put half the batter into either an 8" or 9" square or round pan. So if you're making a full recipe, use 2 pans. Baking time will be less for the smaller pans because you're baking a lesser amount per pan. You can bake both pans at the same time. Don't forget to grease and flour the smaller pans if you plan to take them out to frost them as a layer cake.
