When I fry tempura vegetables do I need to pre-cook any of the vegetables?!


Question:

When I fry tempura vegetables do I need to pre-cook any of the vegetables?

I just want to be sure I don't end up with hard potatoes. The few minutes it takes for the batter to brown seems a little short to get well cooked pototoes.


Answers:

I cut things thin or in a away the allows them to cook a bit more, lower the heat on the oil.

I use sweet potatos, peppers, onions, beans, carrots, mushrooms anything you desire, the batter is best cold. I use the rice flour batter and make it with club soda.

I was a chef for many years, worked in Japan and they turn it out very quickly and it is an art form to be sure. With potatos you may have to slice them thinner or give them a 3 minute zap in the microwave and refresh them in cold water, but if you lower the temparture and cook them 1-2 mintues long, I have my oil at 325 F no higher.
