When should I use a griddle as opposed to a grill?

Is it worth buying one?


Answers:

A griddle pan is great, you don't have to buy one of those fancy expensive electric ones, just get a really heavy pan that will go on the hob.

You heat the pan up to very hot before you put anything in it and you generally brush the food item with oil instead of putting oil the pan. The result is that the food sears and seals all the flavour and juices. Marinade the food first and you can create that barbecue effect without all the mess.

You can cook most things on the griddle but don't do chicken pieces with bone in as the outside would burn to a crisp before the middle was cooked to a safe enough temperature.
