What can you make with lebanese cucumbers?

I thought they were zucchini when i bought them to make as baby food but i was wrong - besides a salad what else can be done with them?


Answers:

Cming from a greek backround u can make Tatziki (cucumber and yoghurt dip).. awesome with cooked meat or chicken, or used in wraps or sandwiches..Just remove some of the seeds of 2 cucumbers, dice finely, add 1 clove of garlic, grated finely, a drizzle of olive oil, a squeeze of lemon juice, a half teaspoon of salt and 1- 1 1/2 cups of greek yoghurt, or just plain if greek is unavailable!!! for a different spin on the usual salad u could make a cous cous salad, cook cous cous (as per directions, flavoured cous cous works great!), dice cucumber, tomato, red onion, parsley and top with fetta cheese and toasted pine nuts, drizzled with olive oil and a little balsamic.. a dollop of that tatziki is fantastic with this!! Of course dont just limit yourself with the basic of salads, try one with tomato, cucumber, lettuce, shredded carrot, half a tin of corn kernels, a small can of beans ( canellini or borlotti) and some avocado!! its our fave!!
