What is the easiest meal to cook that fulfills the most dietry requirements?
I'm curious more than anything else. Also, 9p noodles from TESCO are getting a bit tiresome.

One of the healthier recipes that I use consists of stir-fry vegetables with shrimp, beef or chicken cooked in oil, then added to the veggies. Served over brown rice this fulfills a lot of nutritional requirements and is very filling.
Another nutritional powerhouse that I fix is a salad composed of dark leafy greens, red cabbage, carrots, green peppers, iceberg lettuce, tomatoes. To that mix I add canned, drained beans like great northern or kidney, chicken, Parmesan cheese-any protein item that looks tasty. I use a low-fat dressing, but a blue cheese or ranch type might suit you better. Croutons round this out. The idea behind this type of salad is to hit as many different color groups as possible because each color: red, green, orange, white, blue(red cabbage, blueberries) has different nutritional values that help in fighting disease and meeting your vitamin requirements. Adding protein helps to "beef" it up and make it a complete meal.
