How to avoid stringy eggplant when baked?
I am making eggplant salad and it requires the eggplant be baked. Whenever I make this salad, the eggplant comes out stringy, no matter how long I beat/mash it or no matter how long I bake it for.
Does anyone know how to avoid stringy eggplant when baked then mashed?

Dumb Question: How do you choose a ripe eggplant?

My only advice would to be more selective on the eggplants at the store. They will all have fibers but if they are ripe enough it should be less annoying.
