Cooking of courgettes ? Urgent?
I am pan-frying sliced courgettes in olive oil and butter. I have never done them before. Do they have to brown, or do they just have to be soft? Thanks in anticipation

I normally toss them in salt and leave to drain in a calender for 30mins before cooking, then rinse them thoroughly and pat dry. At this stage you can dust them with flour(optional)
Crush a clove of garlic and add to the olive oil. When the oil is heated remove the garlic before it burns. Then fry the courgettes in the hot oil till golden brown.
This is the way I was taught in Italy.
