Shortcrust pastry.?

i want to make nigel slater's recipe for shortcrust pastry. in the recipe it says to use butter, can i use margerine instead?


Answers:

You can use margarine instead of butter, but it absolutely must be the block variety. The soft margarine you get in a tub doesn't have the same properties, and the pastry will be tough when it's cooked if you use it. Whatever you use, everything must be really cold so the pastry is nice and light at the end!
