Help me please with green tea cheesecake recipe!?

Hello I was readin the Green tea Cheesecake recipe but there is something i dont quite get it this is the recipe for green teac cheesecake i found online "Preheat oven to 325°F. Press cookie crumbs firmly onto bottom (not sides) of 8-inch-diameter springform pan. Wrap outside of pan tightly with 3 layers of heavy-duty foil. Using electric mixer, beat cream cheese, fromage blanc, and sugar in large bowl until smooth. Add eggs 1 at a time, beating until incorporated after each addition. Beat in green tea powder until smooth. Pour batter over prepared crust in pan. Place cakein roasting pan; add enough hot water to roasting pan to come halfway up sides of springform pan." I don't really understand this sentence "Place cakein roasting pan; add enough hot water to roasting pan to come halfway up sides of springform pan" what is this mean?


Answers:

Basically, you're going to bake the cheesecake in a water bath. The steam keeps the cake from cracking. So, you're going to take take your springform pan with the batter and cook crumbs in it, place it in a roasting pan, then pour water in the roasting pan, but outside of the springform pan until it hits the half way mark of the springform. The foil outside of the springform will protect it from the water leaking in.

I actually just made a cheesecake using this method. No cracks!
