What purpose is adding bicarb soda to flour when mixing ingredients for a banana cake?!


Question:

What purpose is adding bicarb soda to flour when mixing ingredients for a banana cake?

I followed a recipe for banana cake and whilst it was baking the ingredients overflowed from the cake tin. I'm thinking it was the bicarb that caused the trouble. would be interested in knowing answer before cooking the cake again

The baking soda, which is an alkaline, is mixing with whatever acidic ingredients there are in your cake to produce carbon dioxide, which makes your cake rise. This is known as leavening.
