Why does meat shrink ?!


Question:

Why does meat shrink ?

Why is that pork chops and beef tend to down size / shrink while it's cooking in the oven?


Answers:

Generally the fat and juices (aka..water and blood) evaporate so the meat has less water volume.
That is why you are supposed to let your meat "rest" for 20 mins after cooking it, to let the juices get back into the meat.
