What is the best and quickest recipe for people who like homecooked yet low calorie food (other then chicken?)

I have several that are my favorite. I will give you a couple.
Turkey tacos, salad or tostadas
Buy some lean turkey meat. Cook it. Add some spices. I like using Emerils spices, or adobo. You have some meat for your tacos! Get some tortillas, add low fat beans, turkey meat, sour cream ( I use soy), some salsa and your good to go! You can also use this to make a tostada salad. Just get low fat tostadas or bake your own in the oven. Very easy. Just get tortillas and bake them. Add any ingredients you want. I also add olives and tomatoes, delicious! I love turkey meat because it is so versatile. You can make many dishes. You can even use it in lasagna or spaghetti.

Buy a large can of enchilada sauce. I buy the green because it is my favorite.
Cook tortillas
cook potatoes, then cool, peel and mash. Add spices. Again I use adobo.
cook sauce in deep sauce pan. Just until hot.
Dip cooked tortillas in hot enchilada sauce, use prongs so you don't get burned.
Then put tortilla on plate. Add potato stuffing and roll tortilla like an enchilada. Repeat process. I usually add sauce on top then sour cream, lettuce, etc. Very yummy and easy. Not like my grandma used to make! Enjoy!
