Some gravies are made by mixing flour into the drippings that are left in the pan after frying chicken. Stir flour into the grease until it makes a pasty looking solution then gradually add milk stirring constantly over medium heat. Continue stirring until it is the consistency desired. Can't say how much flour or milk because it varies each time I do it. Check for seasoning before serving.

If you are making gravy from watery stock, mix cornstarch with water in a small bowl. Pour it into the stock and stir over medium heat until it is the desired consistency. I usually start with a couple of tablespoons of cornstarch. Check for seasoning before serving.

An older woman once told me the way to measure the amount of flour or cornstarch to use was to pour out the amount you thought you would need and then put back half of it. This advice has worked for me.
