Question:

I need a meal or snack idea without the following ingredients?

Wheat, buckwheat, barley, rye,
tree nuts,
eggs and meat.
(food allergies)

ANY ideas??
(Milk, cheese, peanuts, corn, and soy are ok to use.)

Answers:

-Falafel with veggies and dipping sauce (don't think chikpeas are tree nuts")

-Mini pizzas on cornbread

cornbread:
2c yellow corn meal
1 1/2 tsp baking powder
1 tsp salt
(egg substitute:1 tsp yeast dissolved in 1/4c warm water)
1 1/2c milk/soy milk
2 tbsp olive oil

mix enough to moisten, bake at 450 for 18-20 min in muffin tins or whatever. put spaghetti sauce and cheese on top, let melt.

-stir fry over rice

cook veggies and rice, then top with this sauce:

2c red wine vinegar
1c dry red wine/sherry
1/2c soy sauce
ginger to taste
1-3 tbsp garlic (diced)
2-3 tbsp chunky peanut butter

mix, simmer till well blended. add more soy sauce if thickens too much.

-spiced apple slices

slice apple, heat in skillet/wok with minimal olive oil, add to taste: cinnamon, pinch of sugar (you can omit this), vanilla (is vanilla a tree nut? i know it's a "bean", but..), nutmeg.

-Quinoa with feta, cucumber, tomato, and garlic

-Homemade frozen yogurt pops

put yogurt in dixie cups, cover with plastic wrap, cut small slit in plastic wrap, put in wooden stick/plastic fork/etc, and freeze!

-Taco salad

Make aforementioned cornbread and top with refried beans, cheese, jalape?o, sour cream, onions, tomatoes, olives

-fruit salad

-milk/soy shakes

-tortilla chips (pure corn flour ones) and salsa

-stuffed squash

-paste... no, I'm just kidding. I've run out of ideas...
