Here are some of my favorite casseroles.
This casserole is absolutely delicious. Sometimes I fix the
hashbrowns by themselves as a side dish for supper.
Hashbrown Potato/Sausage Casserole
1 pound Brown & Serve link sausages (I prefer maple flavor)
2 pounds. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz. sourcream
1 can cream of celery
1 tsp. salt
1 tsp. pepper
1/2 stick butter, melted
Brown sausage, and set aside. Mix all other ingredients together. Put in greased casserole. Bake at 350' for 45 minutes. Remove from oven, and place sausage on top. Cook for another 15 minutes. You can also use lil smokies or beef smoked sausage or kielbasa pieces instead of link sausages.
Hash Brown Casserole (Slow Cooker Version)
Ingredients:
Casserole
? 10 oz. Condensed Cream of Mushroom Soup
? 1/2 cup finely chopped onion
? 1 cup non-fat sour cream
? 1 tsp. salt
? 1/4 tsp. pepper
? 2 1/4 lbs.Frozen hash brown potatoes
? 1 cup grated sharp cheddar cheese
Topping
? 1 tbsp. hard margarine or butter
? 1/4 cup corn flake crumbs
? Optional: Add chopped up ham to make a complete meal.
Casserole
1. Stir first 5 ingredients in large bowl.
2. Add potato and cheese.
3. Turn into slow cooker.
4. Cover and cook on high for 3-4 hours.
Topping
5. Melt margarine in small saucepan.
6. Stir in corn flake crumbs and saute until crisp.
7. Scatter over top before serving.
HAWAIIAN SPAM CASSEROLE
1 can SPAM, chopped fine
2-16 oz. cans pineapple chunks, reserve juice
3/4 cup sugar
1/3 cup flour
2 cups sharp shredded cheese
Mix together pineapple and SPAM and place in greased 9x13 pan. Mix together sugar, flour, pineapple juice pour over Pineapple/SPAM mixture.Top with cheese. Topping: Melt 1 stick butter in frying pan. Add 1 sleeve of Crushed Ritz crackers. Saute until golden brown. Place on top of casserole and Bake at 375 degrees For 30 minutes.
Ham and Broccoli Casserole
3 c. cooked ham, cut or chopped into small pieces
1 bunch fresh, or 1 pkg. frozen, broccoli spears- cooked according to directions and drained
1 c. or more cheddar cheese
1 or 2 eggs (one time I only had one egg and it still turned out good)
1 small can evaporated milk + at least 1/2 c. milk
2 c. Ritz crackers, crushed
extra cracker crumbs
Beat eggs and milk together. Add crushed cracker crumbs. In baking dish, layer the ingredients- starting with ham and broccoli. Pour on some of the mixture. Add cheese. Repeat and end with cheese and some extra cracker crumbs on top.
Baked Ziti Casserole
2 pounds of hamburger, cooked and drained (optional)
1 Pkg (16 oz) ziti or small tube pasta
1 egg, lightly beaten
1 carton (15oz) part-skim ricotta cheese, divided
1/2 cup grated Parmesan Cheese, divided
1 jar (28oz) spaghetti sauce ( I like to use extra sauce)
Italian Seasonings to taste (add to spaghetti sauce)
2 cups (8oz) shredded part-skim mozzarella cheese
~ Cook hamburger and drain grease, add to spaghetti sauce (If adding hamburger, you will need two jars of spaghetti sauce)
~Cook pasta according to package directions. Drain pasta; set aside. In a small bowl, combine the egg, ricotta and 1/4 cup Parmesan cheese.
~Spread one cup or more spaghetti sauce in a baking dish coated with non stick cooking spray. Top with a third of the pasta, half of the ricotta cheese mixture, 2/3 cup mozzarella cheese, 1 tablespoon parmesan cheese and 1 cup sauce.
~Repeat layers of pasta, ricotta mixture and mozzarella cheese. Sprinkle with 2 tablespoons Parmesan cheese. Top with the remaining pasta, sauce, mozzarella cheese and Parmesan cheese. Cover and bake at 375' for 45-50 minutes or until heated through. Yield 12 servings
RICE AND BROCCOLI CASSEROLE
10 oz. broccoli, thawed, not cooked
2 c. Minute Rice, uncooked (I use Success Rice)
1 can cream of celery soup
1 soup can water
8 oz. Cheez Whiz
1/2 stick butter, melted
Spray the baking dish with a non stick spray.
Mix all ingredients together and put in the baking dish and bake for 30 minutes at 350'.
Broccoli Casserole
1 (10 oz) pkg. frozen, chopped, broccoli
1 can of cream of celery soup
2 eggs
1/2 c. mayonnaise
1 tsp. bell pepper, chopped (fine)
1 tsp. onion, chopped
salt and pepper, to taste
Pour into greased casserole. Top with Pepperidge Farm Herb Stuffing.
Bake for 25 minutes at 350'.
Broccoli Chicken Casserole
2-3 boiled chicken breasts, diced into small chunks
(just boil the chicken for at least 10-15 minutes or until no longer pink)
Cool and then cut into chunks
1 pkg broccoli
1 can of cream of chicken
Pepperidge Farm Stuffing
1/2 c. mayonnaise
1 1/2 tsp. lemon juice
4 oz pkg mild cheddar cheese
Boiled the broccoli for 5 minutes, then drain.(Boiling the broccoli speeds up the cooking time).
Combine soup, mayonnaise, and lemon juice. Mix with broccoli and diced chicken. Sprinkle with cheese and stuffing mix. Bake at 350' for 35 minutes :0}
Chicken Broccoli Casserole
3c. cooked rice (i use success)
1 tbsp. butter or margarine
1 can of cream of chicken
1 soup can of milk
1/2 c. chopped onion (recipe calls for 1 cup, I'm not too crazy about onions so I use 1/2 cup)
1/2 c. chopped celery (recipe calls for 1 cup, I'm not too crazy about celery so I use 1/2 cup)
3 c. chicken, chopped
1 pkg frozen broccoli, cooked
8 oz Cheez Whiz (some times i add more)
the cheesier the better
Saute onions and celery in butter until clear.
Add chicken soup and milk.
Add cheez whiz and heat slowly until blended.
Mix in broccoli, rice and chicken.
Season to taste. Pour into casserole dish, and
bake at 350' for 30 minutes.
(casserole may be frozen after baking)
