Broccoli Overload!?

I am happy to have this overabundance of broccoli because I love it, but I can't eat it all before it goes bad. What are some suggestions on how to use it all up or freeze it or... help!


Answers:

You've already got instructions on how to blanch and freeze the broccoli, so I'll just give you my favorites for eating the broccoli.

Stuff a baked potato with broccoli in cheese sauce, top with a garnish of crumbled bacon/bacon bits, if desired.

Steamed broccoli with just a touch of salt and butter. You can make it with broccoli and cauliflower, as well, or even broccoli, cauliflower and carrots.

Make as above, but top with cheese sauce instead of butter and salt, and serve.

Put the lightly cooked or blanched florets in with your favorite green or garden salad. Then, to use up the stems, matchstick them (blanch them if you want) and mix them with shredded raw cabbage and shredded or matchsticked raw carrots. Add raisins to taste. Use a mayonnaise, vinegar, sugar dressing if you like it creamy, or just a sugar and vinegar dressing.

Chicken and broccoli and rice casserole, or its close relative, chicken, broccoli and noodles or fettuccine. Made with leftover chicken, condensed cream of whatever soup, broccoli, and the starch. (I have used cream of chicken, broccoli, mushroom, and celery soups, as well as cheese.)
