Why is it important to have equal amounts of mixture for each muffin before baking?
Also why are wet and dry mixes prepared seperately and combined together at the last minute?
and what are some problems that may occur if muffins do not rest in the tray for a few minutes after they're removed from the oven?
Answers:
You need equal amounts of mixture so that ALL muffins will be cooked at the same time.
The wet & dry mixes are kept separate so that the muffin will stay as fluffy & light as possible. As once the wet & dry are mixed, the aerator (baking soda usually) starts working so that if the mixture is out of the oven too long - the end result will not be as light. Don't panic tho, follow the recipe & all shall be ok.
You need to rest the muffins so that they come out of the tray in one complete piece - I learnt that the hard way! - kept having bits left in the trays.
