Recipe for pineapple using the pineapple itself as a plate?

think it might have meringue on top. Got a dinner party coming up at which I need to impress!!!

oh thank you all so much! All your ideas are great, I think I will have to have a few more parties to try them all out...do you all want to come?

Pine apple Ninon (classical french dish) - Cut pineapple in half lengthways (inc leaves) scoop out the flesh, discard the inner core, cut the flesh into cubes, mix with thickly cut banana & strawberries, add a little Curacao, Grand Marnier or Cointreau - allow to macerate for 10mins, re place into p/apple shell pipe with meringue & glaze under the grill.
You can buy small pineapples which will give you two portions.
The meringue is NOT compulsory, you can serve accompanied by whipped cream
