When making bread-how long do you set the dough aside before it visibly rises?


Answers:

Generally, that depends on your recipe, the humidity outside, the temp inside, and what sort of yeast you're using. The more salt there is in a recipe, the cooler or drier it is, the longer it will take to rise. Generally, I use a commercial grade instant yeast and it takes about a hour to hour and a half to let it rise properly. The best thing to do, however, is not to rely on a time, but to put a piece of masking tape on the bowl about where the bread will be when it doubles. Then check on it periodically until it reaches that level.
