Does anyone have the recipe for sugared almonds/ candied almonds?!

Question:

Does anyone have the recipe for sugared almonds/ candied almonds?

The sort sold by street vendors in Spain and the Balearic islands? I found the recipe in a book in spain, and forgot to write it down, and I'd love to have the recipe, I know it's simple, and I know the method, I just need to know the ratio of almonds to sugar?

Answers:

Here is an extremely easy and fast candied nut recipe I make every Christmas. I've never made it with just almonds, but it is good with mixed nuts, pecans and walnuts so I think it would be good with just almonds.

Candied Nuts

2 tablespoons water
1/4 cup sugar
1 1/4 cups mixed nuts; almonds, peanuts, cashews, pecans

1. Bring 2 tablespoons water and 1/4 cup sugar to a boil in a medium saucepan over medium heat.

2. Add the nuts and stir often until water evaporates. Continue stirring until the sugar begins to harden on the nuts. When the sugar on the nuts begins to turn light brown, pour them into a bowl or waxed paper to cool. Be careful not to cook the nuts too long or the sugar will burn.

I made these in a large skillet and you can easily double the recipe. You'll probably want to!

Tip: As the nuts start to cool in the bowl, stir them to help separate them. By the time they are totally cooled, most of them will be separate.
