Zucchini bread question?!

Zucchini bread question?

My neighbor gave a giant zucchini from her garden, and I found a recipe to make zucchini bread. It calls for two cups of shredded zucchini. Dumb question, I know, but I have never made this before - do I cook the zucchini? Peel it? Or do I just grate it raw? Thanks, I appreciate the help!


Answers:

I peel the Zuke when making bread. All other Zuke recipes I leave the skin on for more nutrients.
On real big Zukes you don't want those large seeds in the recipe, they don't shred.
Cut it length wise after peeling and take a spoon and remove all of the see.
Now grated the item and add to you recipe. With the zuke that large you have leftover. Cut big thick slices in it and soak in balsamic winger 15-30 minutes. Grill on the BBQ turning once and you have a delicious side. The seeds can be baked with some salt or Cajun seasonings for a treat also, like pumpkin seeds.
