Recipe for crisps?

I'd like to have a go at making chips\crisps at home, not the hot "fries" variety, the snack food type that come in packets at the supermarket.

are there any recipes around for making crisps at home?


Answers:

You don't really need a recipe.

Most commercial potato chips are made using Atlantic potatoes, but Costco sells "Kettle Chips" that are made using Russet potatoes.

Most commercial potato chips are made using hydrogenated vegetable oil, so you get lots of trans fats, but some are made using peanut oil. Zerbe's makes their using lard.

Slice your potatoes thin. It's hard to do this with a knife, but you can do this consistantly if you use a mandolin cutter.

You can soak the raw potatoes in ice water for 20 minutes to remove the surface starch. If you don't, the tater chips are browner after you cook them. I like them that way, but you may not. If you soak them, you'll want to dry them as much as possible.

Drop them in hot oil - about 350. Drop them one at a time, because you don't want them sticking together. Limit the number you're frying at once, because you don't want the temperature to drop.

Salt them immediately when they come out of the oil, because the oil won't stick later on. Drain them on a wire rack, preferably, or on old newspaper.
