What's your favorite variety of grilled cheese sandwich?

What sort of bread and cheese do you use? Do you put any extras in? Just looking for new ideas.

Answers:

We call this one "The BIG O". Get some really good bread, sour dough is one of our favs, so is whole grain w/ nutty things in it. Spead a good fat pat of butter on the heating pan, so that nothing sticks. Spread pesto on each piece of bread you're going to use. Lay down mozzarella (fresh mozza is incredible in this, but the other kind works well, too!) on top of one of the pesto-covered slices of bread, and thick slices of fresh garden tomatoes on the other slice of pesto-covered bread. You can also put a drizzle of olive oil, freshly ground black pepper and salt on the tomatoes. Put it together. Grill 'til golden brown and all melty. Remove from heat to a plate, tuck a big ole napkin under your chin and come to orgasm, baby. This is also killer w/ rosemary ham, grilled chicken, prosciutto, or pepperoni added to it. Bacon would be killer (but a cholesterol bomb), too! Good also w/ avocado added after cooking. Muenster, gruyere, havarti, jack w/ jalapeno cheeses, edam, fontina, to say nothing of a good aged cheddar...are also all really good! So are smoked cheeses w/ turkey in this. Experiment. Even the disasters (as if there could be such a thing w/ grilled cheese...) are fun to eat, too. Serve w/ lots of good cold beer for a complete glut!
