What is the secret to perfect poached eggs?


Answers:

they make contraptions that will keep it all perfectly round, but I think these are cheating. Break the egg into a cup, make sure you didn't break the yolk & there are no shells in it. get a pan of water about 3 inches deep & heat it to not quite boiling. Gently pour the egg from the cup into the water. It will make ghost like swirlies... kinda cool. Time for 3:30 for medium poach, then remove with a slotted spoon. Touch the center to see if it is done enough, then gently pat with a paper towel to remove excess water. You can cut the edges if you feel the need to make them shaped perfectly, but I think this is wasteful. Lay the egg over a slice of Canadian Bacon on top of a slice of English muffin, then top with Holendase sauce & a bit of paprika & you have a great Eggs Benadict (I have a great Holendase recipie if you want it.)
