Question:

Need ideas on what to do with stuff from the Farmer's Market?!?

I went to the farmer's market today and bought: 2 large white onions, 1 large red onion, a bunch of scallions, basketful of carrots, quart of raspberries, pint of grape tomatoes, and 3 bell peppers. I need some ideas on how to use these to make some delicious meals! Ty!

Let's see here's what I'd do:

-With the white, red & green onions, I'd slice them up& then saute' them with a bit of olive oil, sea salt & fresh cracked pepper.

-With the carrots, I'd make a carrot & raisin salad. Take the carrots & scrub them under running water. Peel them. Then take a large cheese grater and grate them. Add to the carrots 1/4 C. of dark raisins & 1/4 C. of golden raisins, 1 C. of mayonaise, 1 tsp. of cider vinegar, and salt & pepper to taste. Chill before serving.

-With the bell peppers, I'd make stuffed bell peppers. Take 1 lb. of ground beef (browned), 3 C. steamed white or brown rice, 1/4 C. chopped green onions, 2 cloves of garlic (crushed) and seasoning to taste. Combine all of the ingredients minus the peppers in a bowl. Take the peppers cut off the top (keep it) and remove the seeds. Proceed to stuff the bell peppers with the rice mixture. Place the top of the pepper back on the stuffed pepper. Place the peppers
in a greased baking dish and top with a marinara sauce & cover with foil. Bake at 350 for 30-45 min.

-Raspberries...I'd take them and place them in a sauce pan. Top them with about 1/4 C. of sugar, 1 T. of honey, 1/4 C. water & the zest of 1 lemon. Let it come to a boil and turn it down on low. Cook for about 10 min. On a small plate, take a slice of pound cake, top it with some vanilla bean ice cream and some of the raspberry topping. Garnish with a slice of lemon before serving.
