Recipe for a birthday cake that is suitable for kids with allergies?

I need a cake to send to daycare that is simple and can be eaten by just about anyone!! Especially kids with allergies.

I'm sorry I don't know the allergies, my kids don't have any.

Any ideas??? Thanks

Celebration Cake (vegan)
2 cups wholemeal self-raising flour
1 1/2 cups sultanas
1 1/2 cups raisins
1 cup currants
1 1/4 cups apple juice concentrate
3/4 cup vegetable margarine
6 tablespoons raw demerara sugar
3 tablespoons molasses
1/2 cup soya milk
2 tablespoons mixed spice
Preheat the oven to 150C/300F/gas mark 2

Use a 23cm/9 inch round cake tin.

Put all the dried fruit in a bowl, pour the apple juice concentrate over and leave to soak overnight, Stir from time to time to make sure all the fruit is soaked.

Put the margarine and sugar in a large mixing-bowl and cream well together before stirring in the molasses, flour, soya milk and mixed spice. An electric mixer may be used if you prefer. Fold in the soaked dried fruit and stir till evenly distributed through the mixture.

Line the cake tin with grease-proof paper. Pour in the mixture and bake for about 3 hours till a warm knife inserted in the centre comes out cleanly. Allow to cool on a rack before removing from tin.


it's eggless, nut less, and dairy less so it should fit the bill. oh and a sultana is a golden raisin.
