I am way too many carrots this year - I would like to know if I can shred them and freeze them for future use?!

I am way too many carrots this year - I would like to know if I can shred them and freeze them for future use?

My freezer is already full of muffins, loafs etc. but I still have lots in the garden. I would like to put them into 1-2 cup portions of shredded carrot (raw) and utilize inthe future for baking. Would like to know if anybody has tried this technique or has any experience with this.

I WOULD'NT SHRED EM ! THEY WILL TURN FASTER ON YOU !
RATHER PEEL EM CUT EM 3-4 INCH LONG (YOU CAN SHRED WHEN NEEDED ) PEEL EM FIRST !!
THEN IN A SUGAR/SALT BRINE (1/2 SUGAR 1/2 SALT ) PUT CARROTS IN FREEZER BAGS AND ADD BRINE SEAL LEAVING ENOUGH ROOM FOR ICE EXPANSION .
THAW WHEN NEEDED RINSE AND SHRED !! VOILA !!
