Who knows the best way to cook halubut?

Simple recipes only please - I took cook it in less than an hour. Specifically, how do you get that light brown crust you get in restaurants?


Answers:

1 c. dry bread crumbs
2 tbsp. finely grated fresh horseradish
1 1/2 tsp. finely grated orange peel
1 clove garlic, minced
4 (7 oz.) halibut fillets, trimmed of skin, bones & dark membrane
Salt to taste
3 tbsp. peanut oil
1 tsp. sesame oil

Preheat oven to 375 degrees. In medium bowl, combine crumbs, horseradish, orange peel and garlic. Spread mixture on small plate or wax paper. Season halibut fillets lightly with salt, then press each fillet into crumb mixture, making sure both sides are completely covered.
Heat oils over medium heat in an ovenproof saute pan, large enough to hold fillets in a single layer. Carefully place fillets in pan so as not to knock off crumbs. Cook 1-2 fillets at a time for easier handling. Cook for 1-2 minutes to brown crust, but do not burn or blacken. When all fillets are brown on one side, arrange them, uncooked side down, in saute pan and place in preheated 375 degree oven. Bake for about 5 minutes or just until fish is firm in the middle. Place a halibut fillet on each of 4 warm dinner plates.


HORSERADISH POTATOES:

1 1/2 lb. baking potatoes, peeled & coarsely cubed
5 c. cold water
Salt to taste
1 c. heavy cream
1/2 c. loosely packed freshly grated horseradish
2 cloves garlic, finely minced
1 shallot, finely minced
Ground white pepper to taste
Juice of 1 lemon
2 tbsp. unsalted butter

Place potatoes in a large saucepan with cold water and salt to taste. Bring to a boil. Reduce heat and simmer for about 30 minutes or until potatoes are very soft. Drain potatoes in a colander and place in a large mixer bowl. Place cream in a small saucepan over medium heat. Add horseradish, garlic and shallot.
Bring cream to a boil, reduce heat and simmer for 4 minutes. Add hot horseradish cream to potatoes. Using an electric mixer, blend potatoes and cream until smooth. Season to taste with salt, white pepper, lemon juice and butter. Remove potatoes from mixer bowl and keep warm.
