I canned some salsa?!


Question:

I canned some salsa?

I processed the salsa for the time specified and I took the jars out and set them on the counter on a towel, very gently. Suddenly a few of the tops, which were down, popped up! And then about five minutes later they all popped back down again. Is this okay or should I refridgerate???


Answers:

If you put the salsa in the jars when the jars were hot and sterile, and the salsa was hot, you boiled the lids and rings, and processed them in a rolling boil, you should be fine.. do not store your salsa with the rings on though, the water gets under there and will cause it to become rusty and could ruin your food. If when you remove your rings your lids are on tight to the touch, you are fine and don't need to refrigerate, unless you open one and have some!
