pastry flour has about 9% gluten, all purpose has 11-11.5% gluten and bread flour has 11-13% gluten.
all purpose is just fine, it's what i use at home.
if you have actual bread flour, go easy on it, and throw in an extra knob of butter (fats shorten gluten strands, hence 'shortening'). just mix untill combined, let it rest and don't forget that rolling out dough develops the gluten further.
