What is the best recipe for a soft and fluffy veggie pizza without any meat or chicken?

Answers:
Basic Dough for One Pizza:
2 cups flour
1 tablespoon sugar
1 teaspoon salt
1 package dry yeast
2 tablespoons softened margarine
1 cup very warm water
Additional flour
Nonstick cooking spray or cornmeal
In a large bowl, mix the about half the flour and all of the sugar, salt and yeast. Add margarine and all the water. Blend with a wooden spoon or sturdy metal cooking spoon, then continue adding flour in small amounts until a soft ball is formed and the dough will not absorb any more. It’s okay if you don’t use all the flour, or need a little more.
Flour the clean dry counter and your hands, then knead the dough, adding flour, until it is no longer sticky (5 minutes or so). Put a little flour in the bowl (to prevent sticking) and return the dough to the bowl.
Turn on the oven until you just feel warmth with your hand in the open oven. Turn it off, then put the dough (bowl and all) in to let it rise. Spray cooking spray and/or spread about 2 teaspoons cornmeal (preferred) on the pizza stone or pan.
Check on the dough after 20 minutes, and again at 30, for it to have risen to about double its original size. When it has, take it out and preheat the oven to 425F. Roll the dough with a floured rolling pin, lay it on the pan or stone, and crimp the edges. Once the oven is preheated, bake for 7 minutes.
The Rest
Remove the half-baked dough and top it with whatever you like. Put commercially prepared sauce (sorry, I don't do my own) under other toppings. Sauted vegetables like sliced fresh mushrooms and chopped onions is fine. Other possibilities include green onions, sliced black olives, minced garlic, quartered artichoke hearts, thin-sliced fresh tomatoes (don't saute first), chopped spinach cooked to wilt, or whatever you like.
Top with about 8 oz. grated mozzarella and return to the 425 degree oven. Check at five minutes, and again at 7 or 8. The crust should be golden, the cheese melted but not browned.
