Pizza dough similar to an egg roll wrapper / corn tortilla?!

Question:

Pizza dough similar to an egg roll wrapper / corn tortilla?

I ate an imported very thin, crispy crust pizza tonight that was delicious! The pizza dough was similar to an egg roll wrapper/ corn tortilla.....and was just as thin. If anyone has a recipe or info on this kind of pizza dough I'd appreciate it! Thanks!

Answers:

Wheat Starch Dough Wrappers

Ingredients:
1/2 cup tapioca starch (tapioca flour)
1 cup wheat starch
1/2 teaspoon salt
2 teaspoons vegetable oil
1 cup water

Prep:
Mix starches, salt and oil in a metal bowl.

Bring water to a brisk boil in a small saucepan; then pour quickly over the starch, stirring it in with a strong pair of chopsticks.

Up-turn the bowl over the dough for a few minutes, until partially cooled and the starch is thoroughly moistened.

Then knead lightly to a smooth, soft dough.

To roll out the dough, pull off walnut-size pieces and press into rounds with the fingers, or flatten with a cleaver or tortilla press.
