How do chinese takeaways make soft fried noodles?!

How do chinese takeaways make soft fried noodles?

the only thing i really like from takeaways is the soft fried noodles. i know they usually have some onions and spring onions in it, but i can't figure out what noodles they use (they taste different to the egg ones from supermarkets) and how much soy sauce they use. if i try the noodles are as flavoursome and a bit dry. do they use any other ingredients and how long do they cook them for?

hi molly, its simple actually, first boil the noodle till soft (not too soft, bout 4 minutes) drain the water and put aside,
fried Onion, sliced of beef or chicken, garlic and little ginger stir fried till smell good then put the noodle stirr them add soy sauce, dash od tabasco and tomato sauce, sprinkle of sugar and salt stir them, walla youre done honey...
