Question for experienced bread bakers.....?

I want to refrigerate or freeze unbaked bread and rolls. Tell me at what point should I do it and do I need to let ir rise again? For example, I use a bread machine dough cycle so when it comes out of there my recipe generally needs to be punched out, allowed to rest 10 or 15 mins. then shape and let rise 25 mins or so. When should I refrigerate or freeze, and then what method when ready to bake? Thank you in advance!

What if I freeze it, should I thaw in fridge or take out altogether and defrost and double at room temperature?


Answers:

peace seeker--- I know nothing about a home bread machine. But as a professional baker I can tell you how to freeze bread dough. I suggest you try this in a small batch at first. All ingredients must be cold except the fat. I am going to guess you use instant yeast with a bread machine.
If not you need to activate the yeast in 1/4 cup warm water @ 110*F
(1) Place all dry ingredients in freezer for at least 1 hour.
(2) if using instant yeast add to dry mix after they come out of freezer
(3)if using regular dry yeast (activated)mix into the rest of water or milk remember that the 1/4 cup is a part of the total liquid.
(4) The liquid should be Ice cold. I don't know in what order they are to be added in the bread machine so follow the directions you always follow.When dough is mixed take out of machine and make up into rolls or bread as soon as possible place in the coldest section of the freezer when is frozen hard put on to plastic bags and seal return to freezer. When ready to use take out of freezer place on or in pans let thaw and rise bake as usual.
If you want to place in frig over night use same procedure . Hope this helps you.
