I need recipe for rice Pilaf please. Also, are you supposed to remove the skin from the eggplant when making?

eggplant parmesan? I make my rice pilaf by sauting the rice with broken spaghetti and once the rice and spaghetti is done I add some chicken or beef broth and cook until done. I would like a different way of making it. We are having it with Swordfish, green beans sauted in garlic and butter sauce and apple crisp for dessert. Thank you in advance for your recipes and no links.

MUSHROOM RICE PILAF

* 8 oz. sliced fresh mushrooms
* 2 tablespoons chopped onion
* 2 teaspoons butter
* 2/3 cup chicken broth
* 1/3 cup uncooked long grain rice
* 1 teaspoon dried or fresh finely chopped parsley flakes
* 1/8 teaspoon salt
* Dash pepper

DIRECTIONS

1. In a saucepan, saute fresh mushrooms and onion in butter until tender. Stir in the rice, chicken broth, parsley, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 14-16 minutes or until liquid is absorbed and rice is tender. Then fluff with fork.
