Answers:

You can substitute yogurt for the sour cream in any of these recipes above. Here is a banana cake which probably can be modified to use a bundt pan.

Banana Cake Recipe

This is a classic recipe for a delicious big moist Banana cake. I hope you enjoy!

200grs butter
1 ? cups sugar
3 eggs
4 bananas, peeled and mashed
3 cups flour
1 teasp baking soda
1 teasp baking powder
? teasp salt
? cup milk
2 tablespoons lemon juice

Steps:

1. Preheat oven to 180oc Place butter and sugar in a bowl and beat well. Add eggs, beat well and then add the mashed bananas. Sift in flour, baking soda, baking powder and salt. Stir half into the butter, eggs and sugar mixture. Add milk and lemon juice, then add the remaining dried ingredients. Mix well. Line large square or round tin with baking paper and pour in the soft mixture.

Smooth the top and bake for 35 – 40 minutes fan forced or 45 – 60 minutes without fan until light golden brown, and when you insert the skewer into the mixture it comes out clean. Cool in the tin for 10 minutes, then remove from tin. Ice when cold! Handy Hints: When bananas are over ripe and covered in brown spots, place in freezer! They make wonderful banana cakes. Don’t worry about the skin going black in freezer as when the banana is thawed it will be fine! Just remember that you may have to add extra cooking time if the bananas aren’t properly thawed as mixture will be very cold!
