Question:

I have some pork out defrosting for tonight's dinner. What should I cook?

It's pork escalopes (steaks) not a loin. What can I cook that's a little different? I'd prefer it if it wasn't too "carbohydratey."

Here is one of my own invention, it is a variation on Chicken in the Heather using pork loin, or pork loin medallions.

In a mixing bowl, combine
1/2 cup cooking oil,
1/2 cup honey,
1 teaspoon Curry Powder
1 teaspoon Dry Mustard Powder
1 teaspoon Turmeric
6 Tablespoons Inglehoffer Original Grainy Mustard
Salt and Pepper to taste

Whisk together until you form a smooth emulsion.

Place pork loin medallions in the bottom of a medium sized dutch oven or baking dish. Pour the sauce over the pork, cover and cook at 375*F for 45 minutes, basting at least once.

Remove lid and cook another 30 to 45 minutes, until internal temperature is not less than 165* F. and the meat is golden brown.

I like to serve rice with this dish and I pour some of the sauce over the rice. It will also work with noodles, but you may omit them if you wish.

(If you like things spicy, you can add 1/4 tsp Cayenne, and/or a few drops of hot sauce to the emulsion.)
