Can I use Splenda in a sand tart cookie recipe?


Answers:

It's going to change the cookie, I have a cookbook for using Splenda in a lot of baked items, but of course I can't find it right now.
Here are a few tips from the Splenda website:
For cookies, puddings and custards, use an additional teaspoon of vanilla extract per one cup of SPLENDA? Granular to enhance flavor.
Baked goods made with little or no sugar do not brown like recipes made with sugar.
To help achieve a more golden brown color when baking with SPLENDA? Granular, lightly spray the batter or dough with cooking spray just before placing in the oven.
Cookies, brownies and quick breads: : Check 3-5 minutes before the original recipe's expected bake time.
I also seem to remember my cookbook stating that you may have to tap the pan halfway through baking to flatten the cookies, as they tend to puff up.
I do remember for sure that the author of the cookbook prefers using a blend of sugar and Splenda, instead of purely Splenda, she thought it was better all around that way.
