Can you freeze whole butternut squash?


Answers:

I've never tried it, but my instinctive response would be, "No, probably not." Squash contain a lot of water, and if you try freezing them whole and uncooked, the odds are good that you're going to end up with ice crystal formation. When the squash thaws, you're apt to end up with squash flavored Kleenex.

I'd cut the squash in half, then peel and seed it. Steam the halves briefly -- no more than two or three minutes. Blanching will reduce the moisture content, and then you should be able to freeze the halves with no problem.
