Why does custard powder go yellow when water is added?!

Why does custard powder go yellow when water is added?

It is generally a pinkish colour in its packet


Answers:

well when you make custards you always use more egg yolks than whole eggs, if any whole eggs at all. that's what gives custards their yellow-yellowish colour.
so my guess is that the dried eggs/yolks just take on a pinkish colour, but when rehydrated they revert back to the natural yellow.
