Good recipe for pork chops?

i want a recipe for good pork chops and i want the skin on them to be crackling help


Answers:

1. Forget all this rubbish about coating with olive oil or covering them in crumb mixture and definitely leave out that disgusting garlic. Pork has a subtle flavour all of its own and this doesn't want to be drowned by too many other flavours.

2. Take a sharp knife and cut about every ? inch through the rind and the fat and any gristle (if there is any between the fat and the meat) to the meat so that you have the edge of the pork chop like a coarse frill.

3. Slash across the meat on both sides and drizzle on a little Maggi seasoning and rub it in. Sprinkle both sides with a mixture of herbs: sage, thyme, mixed herbs, etc.

4. Preheat grill, lay chops in grill pan (if it has a trivet turn it over so it is at the lowest level) and put grill pan in at lowest level (this ensure that the meat is cooked through and allows the heat to reach the rind to make it crispy).

5. Cook for about 10 minutes turning them over half way through. Juices in the grill pan can be used to make a gravy, if you wish

6. Serve with grilled tomatoes, peas and mashed potatoes (add a dash of milk, crack in an egg and whip, then add some mature grated cheese with a pinch of mustard powder and blend until smooth), fried apple or pineapple rings make another good accompaniment.

The dimwit who said there is no skin on a pork chop is buying the wrong pork chops.

And the other idiot who said that pigs were dirty animals doesn't know what he/she is talking about. Pigs are, in fact, very clean, their bad reputation stems from the conditions we keep them in.
