Answers:

This is my basic crepe recipe:

2 c. flour
1/2 tsp. salt
2 c. milk
1/2 c. melted butter
3 eggs

Mix eggs and salt first. Add milk and flour in increments. The melted butter is last. Mix thoroughly and refrigerate uncovered at least one hour. You made need to add more milk before you cook to thin the recipe -- do so slowly.
Then cook.

My favorite crepe recipe is Chicken Elegante, which is basically herbed chicken in a white wine sauce. You need the following:

1 clove garlic, chopper
2 tbsp. butter
1 lb. chicken
1/2 c. chicken broth
1/2 c. dry white wine
1/8 tsp. white pepper
1/2 tsp. salt
1/2 tbsp. tarragon
1/2 tbsp. parsley
1 cup heavy cream
3 egg yolks

Melt butter in a skillet over medium heat. Add the garlic and whisk. Add chicken breast, broth, wine, pepper, salt, tarragon and parsley. cover and simmer until chicken is cooked through. Remove chicken and cut into bite-sized pieces. Keep warm.

Add 1 cup cream to the sauce. Whisk sauce. Have egg yolks in a bow and whisk. Add some of cream mixture to the eggs (so they won't cook) before dumping the eggs into the sauce. Whisk until sauce thickens.

Place some chicken in a warm crepe. Drizzle sauce on chicken. Fold the crepe and add some sauce on top.

This dish must be served immediately. Steamed asparagus or a good salad goes great with it.

Enjoy!
