What's the best way to cook vegetables so that they don't lose their nutritional value?

Should you steam or boil? And for how long?


Answers:

I agree with the other posters that steaming preserves the vitamins in the vegies. But if you like your vegies more cooked, then boil them in the least amount of water, and save the vitamin-enriched cooking water in the freezer to add to soups later.
