Whats the diffence between plain yogurt curd, and sour cream?.?

i am use to puttin sour cream in smashed potatoes and on deserts, i was wondering can i use plain yogurt curd in soups, curries, and smashed potatoes?.


Answers:

Being a former chef, yes they are both useable in the same dishes, plain yougart is a milk product soured with a bacterial culture to make it thick, were sour cream has binders and a number of other factors to make it sour and then become firm.

Sour cream is a bit more stable in hot things because of this, were yougart because of its nature must be added at the last minute or it will split and curdle, if you want to add it to a hot dish, mix a bit of flour or cornstarch (UK cornflour) as you add it to the dish, this will stabelize it and keep it from splitting, or best use a high fat one, not one that is dietetic or low fat or with a gelatin unless it is for a dessert item to be chilled.
