What is a fun, but simple cooking project I could do for dinner?

My husband and I had planned to hang outdoors tonight, but got rained out. What is a dinner project we could cook together that would be fun and on the easy to medium range of difficulty?

It takes time, but its fun, and who doesn't love a good taco! (or 12)
