Why the yogurt curds whenever I add to a gravy?!


Question:

Why the yogurt curds whenever I add to a gravy?

I do beat the yogurt up pretty well. But when I add to the gravy, it starts to separate and curd in the gravy. I don't know why its happening. I would really appreciate your advice on how to prevent this.

Thats because you are adding it to hot gravy while cooking. take your pan off the fire then add beaten yogurt, mix well and then put back on medium flame.

Yogurt will curdle when exposed to sudden temperature highs
