Why do you brits put so many things into one single dish?!? Simple is best :) here's how we do it here in southern Italy:

Ingredients 2ppl:
Lentils (use ready lentils cans or leave 12 hours dry lentils into cold water)
Garlic
Celery
Peeled Tomatoes
Olive oil

Heat oil and garlic into a pot (dont fry, just heat), add lentils and stir a bit, then add water (the equivalent of the can, it's enough you have half lentils and half water).
When it boils up add:
2-3 big peeled tomatoes (or pulped equivalent)
a spoon of oil
a stick of celery (chop it in big pieces if you like)
two pinches of salt
a bit of pepper/chilli

Cover, let it boil on easy fire for 15 minutes or more if you like it a bit more "stiffed and dry" (just taste it).
When it's done, you can have it like this or add a small piece of butter (stir it cold in you plate).
