Food spoils because of bacterial contamination caused by age, heat and improper handling. (see sources.) Garlic and onions do not cause spoiling. In fact, some studies (see sources) say they slow the growth of bacteria, but you should still put your chicken in garlic sauce in the fridge. The flavor of raw chopped onions can "spread" in a cold dish (ie. potato salad) and become overwhelming, but that's not spoilage unless you leave that salad out in the sun all day at the picnic.
